The tea plants are shaded before harvest, encouraging their vivid green colour and characteristic umami.

Tender spring leaves are carefully selected at their freshest for sweetness, colour, and a softer finish.

The leaves are steamed, dried, and refined. Stems and veins are removed, leaving the flat leaf known as tencha.

Granite mills grind the tencha slowly into an exceptionally fine powder while protecting its colour and aroma.
