01 · Uji matcha

The whole tea leaf.

Matcha is tencha ground into a fine powder. Unlike steeped tea, the leaf is consumed—bringing its naturally occurring caffeine, L-theanine and catechins into the cup.

Attention
Caffeine and L-theanine have been studied together for measures of alertness, attention and task switching. Individual response varies.
Tea compounds
Matcha naturally contains catechins, including EGCG, alongside amino acids and caffeine.
Drinking quality
First-harvest leaves are selected for colour, texture, aroma, umami and a clean finish.

“Ceremonial grade” is a quality and sensory designation—not a regulated scientific category. Kiyori uses the term for matcha selected for drinking quality: origin, harvest, colour, texture, aroma and taste.
